Vegetable Pulao

Veg pulao is a tasty rice dish with vegetables and spices. If u are bored of plain rice n sambar and want to make something quick then, pulao is the best option. You can make pulao in different ways and here is the simplest way.

Before you plan to cook this dish, you need to decide if you want to prepare Pulao Masala or buy it

Vegitable Pulao

Ingredients

  • 1 cup Basmati Rice
  • 1 large Chopped Onion
  • 1 large Chopped Tomato
  • 1 tablespoon Ginger Garlic Paste
  • 1 tablespoon Turmeric powder
  • Jaggery (As per your taste)
  • Table Salt (As per your taste)
  • Pulao Masala (You can use readily available pulao masala or prepare yourselves)
  • 2 cups Chopped mixed vegetables (You can mix vegetable like carrot, beans, peas, coliflower, potato, capsicum, baby corn etc)

Directions

Step 1 Pre-heat the pressure cooker.Put 3-4 spoons of ghee or oil.
Step 2 Add chopped onion and saute till it turns golden brown.
Step 3 Add ginger garlic paste and fry for 2 mins.
Step 4 Add all chopped vegetables, fry for 2 mins.
Step 5 Then add pulao masala, turmeric powder and washed rice and mix well.
Step 6 Add 2 cups of water, jaggery and salt according to your taste.
Step 7 Add 2 spoons of ghee, close the cooker and make 3 whistles. Before closing the cooker, You can also add some mint leaves. It gives very nice aroma.
Step 8 Enjoy the plain pulao or with cucumber raita.

  • 1 Carrot (Finely grated)

Ingredients

  • 2-3 Green Chillies
  • 3-4 Cardamom (Elaichi)
  • 2-3 Cloves (Lavang)
  • 1 Inch Cinnamon Stick (Dalchini)
  • 1-2 Bay Leaves
  • 4-5 Black Pepper
  • 3 tablespoons Grated Coconut (Only if you like)

Directions

Step 1 Grind all the above ingredients to make pulao masala.

Bhang

Ingredients

  • 1oz Marijuana (Fresh leaves and flowers of a female plant preferred)
  • 2 cups Water
  • 4 cups Milk
  • 2 tablespoons Choppped Almonds
  • 1/8 teaspoon Garam Masala (You can add this as per your taste)
  • 1/4 tablespoon Ginger Powder
  • 1 tablespoon Rose Water
  • 1 cup SUgar

Directions

Step 1 Boil the water and pour it into a tea pot.
Step 2 Clean the marijuana, add it to the teapot and cover it with lid. Brew this for 10 minutes
Step 3 Now strain the water and marijuana through a piece of muslin cloth, collect the water and save.
Step 4 Take the leaves and flowers and squeeze between your hands to extract any liquid that remains. Add this to the water.
Step 5 Place the leaves and flowers in a mortar and add 2 teaspoons warm milk.
Step 6 Slowly but firmly grind the milk and leaves together. Gather up the marijuana and squeeze out as much milk as you can. Repeat this process until you have used about 1/2 cup of milk (about 4 to 5 times).
Step 7 Collect all the milk that has been extracted and place in a bowl. By this time the marijuana will have turned into a pulpy mass.
Step 8 Add the chopped almonds and some more warm milk. Grind this in the mortar until a fine paste is formed. Squeeze this paste and collect the extract as before. Repeat a few more times until all that is left are some fibers and nut meal. Discard the residue.
Step 9 Combine all the liquids that have been collected, including the water the marijuana was brewed in. Add to this the garam masala, dried ginger and rosewater. Add the sugar and remaining milk.

Kayi Ganji

  • 1 cup White Rice
  • 1 cup Coconut Milk
  • 2-3 cups Drinking Water
  • Salt to Taste

Directions

Step 1 Wash the rice thrice in water.
Step 2 Add 2-3 cups of water to rice and place it on stove. Wait for one whistle
Step 3 Add coconut milk and salt as per your taste. Bring to boil.
Step 4 If needed, add little water to make it semisolid.

Eat hot kayi ganji with ghee and pickle.

Ingredients

  • 1 cup Boiled RIce (Its also known as Kerala Rice, Brown Rice)
  • 7-8 cups Water

Directions

Step 1 Wash and soak boiled rice for 30 minutes.
Step 2 For 1 cup of rice add 7-8 cups of water.
Step 3 Place the cooker on stove and wait for 3 whistles
Step 4 After 3 whistles, keep in simmer for 20 minutes.Boiled rice needs more time to cook.

Eat hot gangi with salt, ghee and pickle.

Ingredients

  • 1 cup White Rice
  • 2 cups Water

Directions

Step 1 Take One cup of rice. Wash the rice thrice in water. Ensure that dust, stone mixed in rice (if any) washes away
Step 2 Put the washed rice in Pressure Cooker. Put 2 cups of water and keep it on stove
Step 3 Allow the pressure cooker to whistle thrice
Step 4 Allow the cooker to cool down. Now you can serve the rice hot.

Bisi Bele Bath

Ingredients

  • 2 cups Rice
  • 1 cup Toor Dal
  • 2 Carrot
  • 15 Beans
  • 2 Potato
  • 1/2 cup Peas
  • 2 Tomato
  • 1/2 cup Grated Coconut
  • 1-2 tablespoon Tamarind Paste
  • 1/2 tablespoon Jaggery
  • 3 tablespoons Ghee
  • Salt (As per your taste)
  • 1/2 tablespoon Muster Seeds
  • 1/2 tablespoon Urad Dal
  • 1/2 tablespoon Channa Dal
  • 1 Red Chillies

Optional

  • 1 Onion
  • 1 Drumstick
  • 1 Capsicum

Directions

Step 1 Cut all vegetables except onions. If you use dry peas, keep them soaked for at least 12 hours before cooking.
Step 2 Cook Rice and Toor Dal separately in pressure cooker
Step 3 Cook vegetables (including peas, except Onions) in a pressure cooker. Add Jaggery and a little Salt to the vessel containing vegetables before cooking. This enables the cut vegetables to absorb a little of the sweet and salt taste while being cooked in the pressure cooker.
Step 4 Cut onions length wise (like you would for say onion pokada). Take 1 tsp Ghee with cut onions in a frying pan and fry onions until they turn golden brown. Keep this aside.
Step 5 Take Tamarind paste in a kadai. Boil it for a minute. Then add the Bisi Bele Bath powder. Add a little water and allow the contents to boil for about 3 min.
Step 6 Add cooked vegetables, Dal and Rice. Add Salt as per taste with a little Jaggery and boil the mixture for 5 minutes while you keep stirring continuously with a ladle to avoid the bottom contents from getting burnt. You may add additional water if you feel the contents are a bit thick.
Step 7 Add fried onions to the Bisi Bele bath mixture above and stir well to help the onions to mix well. Remove from flame.
Step 8 Tempering Bisibele Bath:

Take 1 tsp Ghee in tempering or Oggarane pan. Add Mustard seeds. Once the seeds splutter, add Urad Dal, Bengal Gram and cut Red Chillies and fry until the Dal turns golden brown. Add this tempered mix to the Bisi Bele bath prepared and mix it all well with the ladle.

Ingredients

  • 1/2 cup Channa Dal (Bengal Gram)
  • 1/2 cup Urad Dal (White Lenthils)
  • 2 tablespoons Dhaniya (Coriander Seed)
  • 2 tablespoons Jeera (Cumin Seeds)
  • 1 tablespoon Methi (Fenugreek Seeds)
  • 3 Inchs Dalchini (Cinnamon)
  • 5 Buds Shalmali (Kopak Buds or Marathi Moggu)
  • 2 Elaichi (Cardamom)
  • 2 Laung (Cloves)
  • 15-18 Red Chillies
  • 1 tablespoon Edible Oil

Directions

Step 1 Heat Oil in a pan, add Channa Dal and fry for 2 minutes. Then add Urad Dal and fry until both Dals turn golden brown in color.
Step 2 Now add all the other ingredients like Coriander Seeds, Cumin Seeds, Fenugreek Seeds, Cinnamon, Kopak Buds, Cardamom, Cloves and Red Chillies and fry for 5 minutes or until the Red chillies change the color. Then remove from the flame and let it cool.
Step 3 Once all the fried ingredients are cooled, transfer them to a mixer jar and grind them in the mixer grinder until you obtain smooth powder as shown.

Bisi Bele Bath Powder is now ready. When preparing Bisi Bele Bath, you can add 2-3 tsp of Bisi Bele Bath Powder (as per your taste) directly to the cooked vegetables. Or if you need Bisi Bele Bath to be a little tastier, then grind 2-3 tsp of Bisi Bele Bath Powder with 1 cup of grated Coconut in a mixer grinder to a smooth paste and then mix it with other ingredients.
